Yesss—chocolate pecan turtles are dangerously good and surprisingly easy. Classic candy-shop vibes 🐢🍫

Chocolate Pecan Turtle Candies

Ingredients

  • 1 cup pecan halves
  • 1 cup soft caramels, unwrapped
    (about 20–24 store-bought caramels)
  • 2 tbsp heavy cream or milk
  • 8 oz chocolate (semi-sweet or milk), chopped or chips
  • Optional: flaky sea salt

Instructions

  1. Toast the pecans
    • Preheat oven to 350°F (175°C).
    • Spread pecans on a baking sheet and toast 6–8 minutes until fragrant. Cool.
  2. Make pecan clusters
    • Line a baking sheet with parchment.
    • Arrange pecans in small clusters (3–4 halves each), shaped like little turtle “legs.”
  3. Melt the caramel
    • In a microwave-safe bowl, heat caramels with cream in 30-second bursts, stirring until smooth.
  4. Add caramel
    • Spoon about 1 tablespoon of caramel onto the center of each pecan cluster.
    • Let set 5–10 minutes.
  5. Melt the chocolate
    • Microwave in 30-second intervals, stirring until smooth.
  6. Top with chocolate
    • Spoon chocolate over the caramel, letting some peek through.
    • Sprinkle lightly with flaky salt if using.
  7. Set
    • Chill 20–30 minutes until firm, or let set at room temperature.

Pro Tips

  • 🍫 Glossy finish: Add ½ tsp coconut oil to the melted chocolate
  • 🐢 Neater turtles: Chill caramel briefly before adding chocolate
  • 🥜 Swap pecans for cashews or walnuts if needed

Storage

  • Store in an airtight container at room temp up to 1 week
  • Refrigerate up to 2 weeks (let sit before eating for best texture)
