🥩 Crock Pot French Onion–Style Beef Stew

Serves: 4–6

Cook Time: 7–8 hours low (or 4–5 hours high)


Ingredients

For the stew:

  • 2–2½ lbs chuck roast, cut into large chunks
  • 3 large yellow onions, thinly sliced
  • 3–4 carrots, sliced
  • 3 medium potatoes, cubed
  • 3 cloves garlic, minced
  • 3 cups beef broth (low sodium preferred)
  • 1 tbsp Worcestershire sauce
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 bay leaf
  • 1 tbsp soy sauce (adds depth)
  • 1 tbsp balsamic vinegar (optional but enhances flavor)
  • 2 tbsp flour (optional, for thickening)
  • Salt & black pepper to taste
  • 2 tbsp butter + 1 tbsp olive oil

Optional topping (French onion style):

  • Sliced baguette
  • Gruyère or Swiss cheese, shredded

Instructions

1️⃣ Caramelize the onions (key step!)

In a large skillet over medium heat:

  • Add butter + olive oil.
  • Cook sliced onions slowly for 15–20 minutes until golden brown and caramelized.
  • Add garlic in the last minute.

This step gives the stew that deep French onion flavor.


2️⃣ Brown the beef

Season beef with salt and pepper.
Sear in the same pan (or separately) until browned on all sides (about 3–4 minutes per side).
This locks in flavor.


3️⃣ Add to Crock Pot

Place into slow cooker:

  • Beef
  • Caramelized onions
  • Carrots & potatoes
  • Beef broth
  • Worcestershire
  • Soy sauce
  • Thyme
  • Bay leaf
  • Balsamic (if using)

Stir gently.


4️⃣ Slow Cook

  • LOW: 7–8 hours
  • HIGH: 4–5 hours

Beef should be fork-tender.


5️⃣ Thicken (optional)

If you want a thicker stew:

  • Mix 2 tbsp flour with a little cold water.
  • Stir into stew during the last 30 minutes.

  • Remove lid last 30 minutes to naturally thicken.

🧀 Optional French Onion Finish

For a true French onion twist:

  1. Ladle stew into oven-safe bowls.
  2. Top with toasted baguette slices.
  3. Sprinkle Gruyère or Swiss cheese on top.
  4. Broil 2–3 minutes until bubbly and golden.

Flavor Tips

  • Add a splash of dry white wine when caramelizing onions for extra depth.
  • For extra richness, stir in 1 tbsp butter at the end.
  • Fresh thyme added right before serving brightens the flavor.
