Instructions

2. Make the Cake Batter

  1. In a bowl, combine flour, baking powder, baking soda, and salt.
  2. In another bowl, cream butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, then add vanilla.
  4. Alternately add the dry ingredients and milk to the butter mixture, starting and ending with dry ingredients. Mix until smooth.
  5. Pour batter into the prepared pan and spread evenly.

3. Prepare Crumb Topping

  1. In a bowl, combine flour, brown sugar, cinnamon, and salt.
  2. Add cold cubed butter.
  3. Use a pastry cutter or fingers to mix until it forms coarse crumbs.
  4. Sprinkle crumbs evenly over the cake batter.

4. Bake

  • Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
  • If crumbs brown too fast, cover loosely with foil during the last 5–10 minutes.

5. Cool and Serve

  • Let the cake cool for at least 10 minutes before slicing.
  • Serve warm or at room temperature. Optional: dust with powdered sugar.

  • Extra crumbly topping: Add 1/4 cup chopped nuts (walnuts or pecans) to the crumbs.
  • Moist cake: Do not overmix batter; overmixing can make cake dense.
  • Make it a coffee cake: Drizzle with glaze: 1 cup powdered sugar + 2–3 tsp milk.
