  • 1½ cups mixed dried fruits (raisins, sultanas, chopped dates, cherries)
    Raisin
  • ½ cup chopped nuts (walnuts or almonds)
  • 2 tbsp orange juice or rum (optional, for soaking)

🧈 Cake batter

  • 1 cup all-purpose flour
  • ½ cup butter (softened)
  • ½ cup brown sugar
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 tsp vanilla extract
  • Pinch of salt

👨‍🍳 Instructions

1. Soak the fruits

  • Mix dried fruits with orange juice or rum
  • Let sit for at least 30 minutes (or overnight for richer flavor)

2. Prepare the batter

  • Cream butter and brown sugar until fluffy
  • Add eggs one at a time
  • Mix in vanilla
  • In another bowl, combine flour, baking powder, salt, and spices
  • Gradually fold dry ingredients into wet mixture

3. Add fruits and nuts

  • Stir in soaked fruits and chopped nuts
  • Mix gently until evenly combined

4. Bake

  • Preheat oven to 160°C (320°F)
  • Pour batter into a lined loaf or cake tin
  • Bake for 45–60 minutes
  • Check with a toothpick (should come out clean)

5. Cool and serve

  • Let cool completely before slicing
  • For best flavor, rest overnight
