🍗 Garlic Parmesan Chicken Meatloaf

🧾 Ingredients (4 servings)

  • 1 lb (450g) ground chicken
  • 1 cup breadcrumbs (panko or regular)
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 large egg
  • ¼ cup milk
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped (optional)
  • 2–3 tbsp ketchup or tomato sauce (for topping)

🍳 Instructions

1. Preheat oven

  • Preheat to 375°F (190°C)
  • Lightly grease a loaf pan or line with parchment paper

2. Prepare the meat mixture

  • In a large bowl, combine:
    • Ground chicken
    • Breadcrumbs
    • Parmesan
    • Garlic, onion
    • Egg and milk
    • Italian seasoning, salt, pepper, parsley
  • Mix gently until well combined (don’t overmix—keeps meatloaf tender)

3. Shape and top

  • Transfer mixture to loaf pan or shape into a loaf on a baking sheet
  • Spread ketchup or tomato sauce evenly on top

4. Bake

  • Bake for 35–40 minutes until cooked through (internal temp: 165°F / 74°C)
  • Optional: broil 2–3 minutes at the end for a golden top

  • For extra flavor, add a bit of minced roasted garlic or grated mozzarella inside
  • Serve with mashed potatoes, steamed vegetables, or a side salad
