Here’s a rich, classic German Chocolate Cake recipe with moist chocolate layers and the signature coconut-pecan frosting:

🧾 Ingredients

For the cake:

  • 1 cup (225g) unsalted butter, softened
  • 2 cups (400g) granulated sugar
  • 4 large eggs, separated
  • 1 tsp vanilla extract
  • 2 ½ cups (310g) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup (240ml) buttermilk
  • 4 oz (115g) German sweet chocolate, melted and slightly cooled (or semi-sweet chocolate)

For the coconut-pecan frosting:

  • 1 cup (200g) granulated sugar
  • ½ cup (115g) unsalted butter
  • ⅓ cup (80ml) evaporated milk
  • 3 large egg yolks, lightly beaten
  • 1 tsp vanilla extract
  • 1 ½ cups shredded coconut
  • 1 cup chopped pecans

👩‍🍳 Instructions

1. Preheat oven

  • Preheat to 175°C / 350°F
  • Grease and flour two 9-inch (23 cm) round cake pans

2. Make the cake batter

  1. Cream butter and sugar until light and fluffy.
  2. Add egg yolks one at a time, mixing well. Stir in vanilla.
  3. In a separate bowl, whisk flour, baking soda, and salt.
  4. Alternately add dry ingredients and buttermilk to the butter mixture, beginning and ending with dry ingredients.
  5. Fold in melted chocolate.

3. Whip egg whites

  • Beat egg whites until stiff peaks form
  • Gently fold into cake batter for a light texture

4. Bake the cake

  • Divide batter evenly between prepared pans
  • Bake 30–35 minutes, or until a toothpick inserted comes out clean
  • Let cool completely on a wire rack

5. Make the coconut-pecan frosting

  1. In a medium saucepan, combine sugar, butter, and evaporated milk.
  2. Cook over medium heat, stirring constantly until mixture thickens (~5 minutes).
  3. Remove from heat; stir in egg yolks, vanilla, coconut, and pecans.
  4. Cool slightly before spreading

6. Assemble

  • Place one cake layer on a serving plate
  • Spread half of the frosting on top
  • Add second layer and spread remaining frosting
  • Optional: frost sides lightly or leave exposed

💡 Tips

  • Use fresh shredded coconut for best texture
  • Chill frosting slightly to make it easier to spread
  • German chocolate is sweeter than semi-sweet, so adjust sugar slightly if needed
