Instructions

1. Make the Dough

  1. In a large bowl, mix flour, sugar, and salt.
  2. Cut in cold butter using a pastry cutter or your fingers until mixture resembles coarse crumbs.
  3. Gradually add ice water, 1 tbsp at a time, until dough comes together.
  4. Divide dough into 2 discs, wrap in plastic, and chill for at least 30 minutes.

2. Preheat Oven

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

3. Roll & Cut Dough

  1. Roll out dough on a floured surface to about ¼-inch thickness.
  2. Cut into rectangles or circles (~4 inches across).

4. Fill & Seal

  1. Place 1–2 tsp of filling in the center of each piece.
  2. Fold over and press edges with a fork to seal.
  3. Brush the tops with egg wash for a golden finish.

5. Bake

  • Bake for 20–25 minutes, until golden brown.
  • Remove from oven and let cool slightly.

6. Glaze

  1. Whisk powdered sugar, milk, and vanilla until smooth.
  2. Drizzle over warm hand pies.

Tips

  • Fruit fillings: add a little cornstarch to prevent soggy pies.
  • Make ahead: dough can be frozen for up to 2 months.
