🦐 Grilled Shrimp Bowl with Avocado, Corn Salsa & Creamy Sauce

Serves: 4

Time: About 30 minutes


🦐 Shrimp

Ingredients

  • 1 lb large shrimp, peeled & deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • Juice of ½ lime

Instructions

  1. Pat shrimp dry. Toss with olive oil, spices, salt, and lime juice.
  2. Grill over medium-high heat for 2–3 minutes per side, until pink and slightly charred.
    (Or cook in a hot skillet if you don’t have a grill.)

🌽 Corn Salsa

Ingredients

  • 1 cup corn (grilled, fresh, or thawed frozen)
  • ¼ cup finely diced red onion
  • 1 small jalapeño, minced (optional)
  • ¼ cup chopped cilantro
  • Juice of 1 lime
  • Salt to taste

Instructions
Mix everything in a bowl and chill until ready to use.


🥑 Creamy Sauce (Lime Crema Style)

Ingredients

  • ½ cup sour cream or Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice
  • 1 small clove garlic, minced
  • Pinch of salt
  • Optional: dash of hot sauce

Whisk until smooth. Add a little water if you want it thinner for drizzling.


🥗 Bowl Base Ideas

Choose one or mix:

  • Cilantro lime rice
  • Brown rice
  • Quinoa
  • Cauliflower rice
  • Mixed greens

🥑 Toppings

  • Sliced avocado
  • Cherry tomatoes
  • Shredded cabbage
  • Black beans
  • Extra cilantro
  • Lime wedges

🥗 Assemble

  1. Add rice or base to bowl.
  2. Top with grilled shrimp.
  3. Spoon over corn salsa.
  4. Add avocado slices.
  5. Drizzle generously with creamy sauce.
  6. Finish with fresh lime juice.

  • Add cotija cheese for a street-corn vibe.
  • Toss rice with lime juice + cilantro before serving.
