🍎🥕 Oatmeal Apple Carrot Cake

🧂 Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour (or whole wheat for healthier version)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp nutmeg (optional)
  • ¼ tsp salt
  • 2 eggs
  • ½ cup sugar (brown sugar works best)
  • ⅓ cup oil (vegetable or melted butter)
  • ½ cup milk
  • 1 tsp vanilla extract
  • 1 cup grated carrot
  • 1 cup chopped or grated apple
  • ¼ cup chopped nuts (optional – walnuts/almonds)
  • ¼ cup raisins (optional)

👩‍🍳 Instructions

1. Prep the oats

  • Soak oats in milk for 10 minutes (this makes the cake soft and moist)

2. Mix dry ingredients

  • In a bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt

3. Mix wet ingredients

  • In another bowl, whisk eggs and sugar
  • Add oil and vanilla, mix well
  • Stir in soaked oats

4. Combine everything

  • Add dry ingredients into wet mixture
  • Fold gently (don’t overmix)
  • Add grated carrot, apple, nuts, and raisins

5. Bake

  • Preheat oven to 180°C (350°F)
  • Grease a cake pan
  • Pour batter evenly
  • Bake 30–40 minutes or until a toothpick comes out clean

6. Cool & serve

  • Let it cool for 10–15 minutes
  • Slice and enjoy!
