For the brownies:

  • 2 tablespoons unsalted butter or coconut oil

Instructions

1. Bake the brownies

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
  2. In a bowl, whisk melted butter and sugar together.
  3. Add eggs and vanilla, mixing until smooth.
  4. Sift in cocoa powder, flour, salt, and baking powder. Stir until just combined.
  5. Pour batter into prepared pan and smooth the top.
  6. Bake for 20–25 minutes (check with toothpick—should come out mostly clean with a few crumbs for fudgy brownies).
  7. Let brownies cool completely in the pan.

2. Prepare the chocolate coating

  1. Melt chocolate chips and butter (or coconut oil) together in a microwave in 30-second intervals, stirring until smooth.

3. Coat the brownies

  1. Remove cooled brownies from the pan and cut into bars.
  2. Dip each bar halfway into the melted chocolate or pour chocolate over the top.
  3. Place bars on parchment paper to set.
  4. Chill in the fridge for 15–20 minutes until chocolate hardens.
