  • 6 bone-in, skin-on chicken thighs (or boneless if preferred)
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • ¼ cup honey
  • 3 tbsp soy sauce
  • 1 tbsp apple cider vinegar (or rice vinegar)
  • ½ tsp red pepper flakes (optional, for a little heat)
  • 1 tsp cornstarch + 1 tbsp water (optional, for thicker sauce)
  • Chopped green onions or sesame seeds for garnish

1. Prep the chicken

  • Pat chicken thighs dry.
  • Season generously with salt and pepper.

2. Sear the chicken

  • Heat olive oil in a skillet over medium-high heat.
  • Place chicken thighs skin-side down and cook 5–7 minutes until golden brown.
  • Flip and cook another 5–7 minutes until mostly cooked through. Remove chicken and set aside.

3. Make the honey garlic sauce

  • In the same skillet, reduce heat to medium.
  • Add garlic → sauté 30–60 seconds until fragrant.
  • Stir in honey, soy sauce, vinegar, and red pepper flakes.
  • Simmer 2–3 minutes.
  • Optional: Mix cornstarch and water → add to skillet to thicken sauce.

4. Combine chicken and sauce

  • Return chicken to the skillet.
  • Spoon sauce over chicken → simmer 3–5 minutes until chicken is fully cooked (internal temp 165°F / 74°C) and glazed.

5. Serve

  • Serve chicken thighs hot with sauce spooned over the top.
  • Garnish with chopped green onions or sesame seeds.
  • Great with steamed rice, mashed potatoes, or roasted vegetables.
