Here’s a hearty, healthy, and easy Kale and White Bean recipe — perfect as a soup, stew, or side dish.


🥬 Kale & White Bean Sauté (or Soup)

Ingredients (Serves 4)

  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1–2 cups chopped kale (stems removed)
  • 1 can (15 oz) white beans (cannellini or navy), drained and rinsed
  • 1 cup vegetable or chicken broth (more if you want a soupier consistency)
  • ½ tsp dried thyme or rosemary
  • ½ tsp crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 tbsp lemon juice (optional, for brightness)
  • Grated Parmesan or nutritional yeast (optional, for topping)

Instructions

1️⃣ Sauté Aromatics

  1. Heat olive oil in a large skillet or pot over medium heat.
  2. Add onion and cook 3–4 minutes until soft.
  3. Stir in garlic and cook 30 seconds until fragrant.

2️⃣ Cook Kale

  • Add chopped kale and cook 4–5 minutes until wilted.

3️⃣ Add Beans and Seasoning

  • Stir in white beans, thyme, and red pepper flakes.
  • Pour in broth and simmer 5–7 minutes to combine flavors.
  • Season with salt and pepper to taste.

4️⃣ Finish & Serve

  • Remove from heat, add a squeeze of lemon juice for brightness.
  • Top with Parmesan or nutritional yeast if desired.
  • Serve as a main with crusty bread, or as a side dish.

  • Add sausage or chicken for a heartier meal.
  • Make it a soup: Add more broth and simmer 15–20 minutes.
