🧂 Ingredients (serves 4)

  • 4 large boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup cooked pasta sauce or marinara
  • 4–6 slices cooked ham or pepperoni (optional)
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1–2 tbsp olive oil

🥣 Instructions

1. Preheat oven

  • 375°F (190°C). Grease a baking dish.

2. Prepare the chicken

  • Slice each chicken breast horizontally, creating a pocket (don’t cut all the way through).
  • Season inside and out with salt, pepper, garlic powder, and Italian seasoning.

3. Make the filling

  • In a bowl, mix ricotta, ½ cup mozzarella, Parmesan, and a few spoonfuls of marinara sauce.
  • Optional: add chopped cooked spinach or cooked ham/pepperoni.

4. Stuff the chicken

  • Spoon filling into each pocket.
  • Secure with toothpicks if needed.

5. Sear (optional for extra flavor)

  • Heat olive oil in a skillet over medium-high heat.
  • Sear chicken 2–3 minutes per side until lightly golden.

6. Bake

  • Place chicken in prepared baking dish.
  • Spoon remaining marinara sauce over the top and sprinkle remaining mozzarella.
  • Bake 25–30 minutes, or until chicken reaches 165°F (74°C) internally.

7. Serve

  • Remove toothpicks carefully.
  • Serve with garlic bread, salad, or steamed vegetables.
