Ingredients (serves 4–6)

  • 2 lbs potatoes (Yukon Gold or Russet are best)
  • 4 tablespoons unsalted butter

Instructions

  1. Prep the potatoes
    • Peel (optional) and cut potatoes into even chunks (~2-inch pieces).
