Oven-Baked Pork Chops with Roasted Potatoes & Onions 🍽️

A simple one-pan meal with juicy pork chops and crispy roasted vegetables.

Ingredients

  • 4 Pork Chops (bone-in or boneless)
  • 3–4 medium Potato (cut into chunks)
  • 1 large Onion (sliced)
  • 3 tablespoons Olive Oil
  • 3 cloves Garlic (minced)
  • 1 teaspoon Paprika
  • 1 teaspoon Dried Thyme
  • ½ teaspoon Black Pepper
  • 1 teaspoon salt
  • Optional: chopped Parsley for garnish

Instructions

1. Preheat the oven
Preheat your oven to 400°F (200°C).

2. Prepare the vegetables

  • Place potatoes and sliced onions on a large baking sheet.
  • Drizzle with olive oil.
  • Add garlic, paprika, thyme, salt, and pepper.
  • Toss everything to coat evenly.

3. Add the pork chops

  • Place the pork chops on top of the vegetables.
  • Rub a little olive oil, salt, pepper, and paprika on the pork chops.

4. Bake

  • Bake for 30–35 minutes, turning the potatoes halfway through.
  • Cook until the pork chops reach 145°F (63°C) internally.

5. Rest and serve

  • Let the pork chops rest for 5 minutes.
  • Sprinkle parsley on top and serve.

Tips for Extra Flavor

  • Add sliced Bell Pepper or Carrot to the pan.
  • A splash of Lemon Juice at the end brightens the flavor.
