Peanut Butter Butterscotch Bars

Makes one 9×13-inch pan

Ingredients

  • 1 cup unsalted butter, melted
  • 1 cup creamy peanut butter
  • 1½ cups brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1½–2 cups butterscotch chips

Instructions

1. Preheat & Prep

  • Preheat oven to 350°F (175°C).
  • Grease or line a 9×13-inch baking pan with parchment paper.

2. Mix the Wet Ingredients

  1. In a large bowl, whisk together melted butter, peanut butter, and brown sugar until smooth.
  2. Beat in eggs one at a time.
  3. Stir in vanilla.

3. Add Dry Ingredients

  1. In a separate bowl, whisk flour, baking powder, and salt.
  2. Gradually mix into the wet ingredients until just combined.
  3. Fold in butterscotch chips.

4. Bake

  1. Spread batter evenly into the prepared pan.
  2. Bake 25–30 minutes, until edges are lightly golden and a toothpick comes out with a few moist crumbs.

5. Cool & Slice

  • Let bars cool completely before cutting for clean slices.

Tips & Variations

  • Extra gooey: Slightly underbake by 2 minutes.
  • Crunch: Add ½ cup chopped peanuts or pecans.
  • Chocolate twist: Swap half the butterscotch chips for chocolate chips.
  • Thicker bars: Use a 9×9 pan and increase bake time slightly.
