🔥 Instructions

1. Prepare crust

  • Preheat oven to 160°C (325°F).
  • Mix crumbs, sugar, and melted butter.
  • Press firmly into the bottom of a springform pan.
  • Bake for 8–10 minutes, then cool.

2. Make cheesecake filling

  • Beat cream cheese until smooth.
  • Add sugar and mix well.
  • Add eggs one at a time (don’t overmix).
  • Mix in sour cream, vanilla, and flour.

3. Bake cheesecake

  • Pour filling over crust.
  • Place pan in a larger pan with hot water (water bath helps prevent cracks).
  • Bake for 50–60 minutes until edges are set and center slightly jiggles.
  • Turn off oven, crack door, and let it cool inside 1 hour.
  • Chill in fridge at least 4 hours (overnight best).

4. Make pecan topping

  • In a saucepan, melt butter and brown sugar.
  • Add cream, salt, and corn syrup.
  • Simmer 2–3 minutes until slightly thickened.
  • Stir in vanilla and pecans.
  • Let cool slightly (thick but pourable).

5. Assemble

  • Pour pecan topping over chilled cheesecake.
  • Spread evenly.
  • Chill another 30–60 minutes to set.

  • Use room-temperature cream cheese for smooth texture
  • Don’t overmix after adding eggs (prevents cracks)
  • Water bath = creamier cheesecake
  • Chill fully before adding topping
