Pecan Pie Cheesecake

Here’s a delicious Pecan Pie Cheesecake recipe that combines a creamy cheesecake base with a rich pecan pie topping. It’s perfect for holidays or any special occasion!


Ingredients

For the crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup (1 stick) unsalted butter, melted

For the cheesecake filling:

  • 24 oz (3 packages) cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • ¼ cup all-purpose flour

For the pecan pie topping:

  • 1 cup light corn syrup
  • ½ cup brown sugar, packed
  • ¼ cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 ½ cups chopped pecans

Instructions

  1. Preheat oven: 325°F (163°C). Grease a 9-inch springform pan.
  2. Make the crust:
    • Mix graham cracker crumbs, sugar, and melted butter in a bowl.
    • Press firmly into the bottom of the pan. Bake for 10 minutes. Let cool.
  3. Prepare the cheesecake filling:
    • In a large bowl, beat cream cheese until smooth.
    • Add sugar and vanilla; beat until creamy.
    • Add eggs, one at a time, mixing gently.
    • Beat in sour cream and flour until smooth.
    • Pour filling over cooled crust.
  4. Bake the cheesecake:
    • Place in preheated oven. Bake for 55–65 minutes until the center is almost set.
    • Turn off the oven and leave the cheesecake inside for 1 hour to prevent cracking. Cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
  5. Make the pecan pie topping:
    • In a bowl, whisk together corn syrup, brown sugar, melted butter, vanilla, and eggs.
    • Stir in chopped pecans.
    • Spread topping over chilled cheesecake.
  6. Optional finishing touch:
    • Return to oven at 350°F (177°C) for 15–20 minutes to set topping. Cool again before serving.
  7. Serve:
    • Slice and enjoy! Best served chilled.

  • Use a water bath to reduce cracks in the cheesecake.
  • Let the cheesecake chill overnight for the best texture.
  • Toast the pecans lightly for extra flavor.
