Slow Cooker Beef Noodle Casserole

Ingredients

  • 4 cups Beef broth (store-bought)
  • 2 cups Egg noodles, uncooked
  • 1 lb Ground beef or shredded beef
  • 1 cup Mushrooms, sliced
  • 1 cup Carrots, diced
  • 1 cup Frozen peas
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tsp Thyme or mixed herbs
  • Salt & pepper to taste
  • Optional: ½ cup Shredded cheese for topping

Instructions

  1. Prep the meat (optional)
    • Brown ground beef or shredded beef in a skillet with onion and garlic for extra flavor. Drain excess fat.
  2. Layer in slow cooker
    • Add egg noodles, beef (or shredded), carrots, mushrooms, peas, and herbs.
    • Pour in beef broth and stir gently to combine.
  3. Cook low and slow
    • Cover and cook:
      • Low: 3–4 hours
      • High: 1.5–2 hours
    • Noodles should be tender and ingredients fully cooked.
  4. Finish and serve
    • Taste and adjust salt & pepper.
    • Optional: sprinkle cheese on top and let it melt before serving.

  • For creamier noodles, stir in ¼ cup cream or sour cream at the end.
  • Add fresh parsley for a pop of color.
