Classic Shepherd’s Pie

Ingredients (Serves 4–6)

For the mashed potato topping:

  • 2 lbs (900 g) potatoes, peeled and chopped

For the filling:

Instructions

1. Make the Mashed Potatoes

  1. Boil potatoes in salted water until tender (15–20 min).
  2. Drain, mash with butter and milk.
  3. Season with salt and pepper. Add cheese if desired. Set aside.

2. Make the Filling

  1. Preheat oven to 400°F (205°C).
  2. In a large skillet, cook ground meat until browned. Remove excess fat.
  3. Add onions, carrots, and garlic; cook 5 minutes until softened.
  4. Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  5. Add broth and flour (if using), simmer 5 minutes until slightly thickened.
  6. Stir in frozen peas.

3. Assemble the Pie

  1. Spoon the meat and veggie mixture into a baking dish.
  2. Spread mashed potatoes evenly on top, using a fork to create texture.
  3. Optional: Sprinkle a little cheese on top for a golden finish.

4. Bake

  • Bake uncovered 20–25 minutes, until the top is golden brown and filling is bubbling.

5. Serve

  • Let rest 5 minutes before serving.

  • Vegetarian version: Replace meat with lentils or plant-based mince.
  • Extra flavor: Add a splash of red wine to the filling.
  • Crispy top: Broil for 2–3 minutes at the end to brown the mashed potatoes.
  • Make-ahead: Assemble the pie ahead, refrigerate, and bake 30 minutes longer if baking from cold.
