Here’s a hearty slow-cooker beef stew / crockpot steak bites recipe—rich, cozy, and basically does all the work for you.


Slow Cooker Beef Stew (or Steak Bites)

Ingredients

Meat

  • 2–2½ lbs beef chuck roast or sirloin (cut into big chunks for stew or bite-size for steak bites)

Veggies

  • 4 carrots, sliced
  • 3–4 potatoes, chopped (Yukon gold or russet)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • Optional: mushrooms, celery, pearl onions

Liquid & Flavor

  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 1 tsp soy sauce (optional but 🔥)
  • 1 tsp salt (adjust later)
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 bay leaf

To Thicken

  • 2 tbsp cornstarch + 2 tbsp cold water (optional)

Optional Quick Sear (Highly Recommended)

Heat a skillet with a little oil and brown the beef quickly (1–2 min per side).
This step adds big flavor but can be skipped if you’re short on time.


Instructions

  1. Add veggies to the bottom of the slow cooker.
  2. Place beef on top.
  3. Whisk broth, tomato paste, Worcestershire, soy sauce, and seasonings.
  4. Pour over everything.
  5. Add bay leaf.
  6. Cover and cook:
    • LOW: 7–8 hours
    • HIGH: 4–5 hours
  7. If you want it thicker, stir in cornstarch slurry during the last 30 minutes.

Steak Bite Version (More “Juicy & Savory”)

  • Skip potatoes and carrots
  • Add:
    • 3 tbsp butter (cut into cubes)
    • Extra garlic
    • Splash of beef broth (1–1½ cups total)
  • Finish with fresh parsley and a squeeze of lemon

Serve With

  • Crusty bread 🥖
  • Mashed potatoes
  • Egg noodles
  • Or straight from the bowl (no judgment)
