Ingredients (serves 4)

  • 4 bone-in or boneless pork chops (about 1-inch thick)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil (optional, for searing)
  • 1 box (6 oz) stuffing mix (traditional or herb-flavored)
  • 1 ¼ cups chicken broth
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1 small onion, chopped
  • 2 celery stalks, chopped
  • Optional: 1 teaspoon fresh thyme or rosemary

Instructions

1. Prep the pork chops

  • Season pork chops with salt, pepper, garlic powder, and onion powder.
  • Optional: Sear pork chops in olive oil for 2–3 minutes per side to add extra flavor.

2. Prepare the stuffing

  • In a bowl, mix the stuffing mix with chicken broth, cream of mushroom soup, onion, celery, and herbs.

3. Assemble in slow cooker

  • Spread half of the stuffing mixture in the bottom of the slow cooker.
  • Place pork chops on top of the stuffing.
  • Cover with remaining stuffing mixture.

4. Cook

  • Cover and cook on low for 6–7 hours or high for 3–4 hours, until pork chops are tender and cooked through.

5. Serve

  • Spoon stuffing onto plates and top with pork chops.
  • Optional: garnish with fresh parsley for color.

  • Searing the pork chops is optional but gives a richer flavor.
