Smothered Pork Chops with Potatoes in Gravy

Ingredients (4 servings)

For the Pork Chops:

  • 4 bone-in or boneless pork chops (about ¾–1 inch thick)
  • Salt and black pepper, to taste
  • ½ tsp paprika (optional)
  • ¼ cup all-purpose flour, for dredging
  • 2 tbsp vegetable oil

For the Gravy & Potatoes:

  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 2–3 medium potatoes, peeled and sliced into ¼-inch rounds
  • 2 cups chicken or beef broth
  • 1 tsp dried thyme (optional)
  • ½ cup milk or cream
  • Salt and pepper to taste
  • 2 tbsp butter

Instructions

1. Prepare the Pork Chops

  1. Season pork chops with salt, pepper, and paprika.
  2. Lightly dredge each chop in flour, shaking off excess.

2. Brown the Pork Chops

  1. Heat oil in a large skillet or sauté pan over medium-high heat.
  2. Brown pork chops 3–4 minutes per side until golden. Remove and set aside.

3. Make the Gravy

  1. In the same pan, sauté onions until soft (~3–4 minutes).
  2. Add garlic and cook for 30 seconds until fragrant.
  3. Sprinkle 1–2 tbsp flour into the pan to make a roux, stirring constantly for 1–2 minutes.
  4. Gradually whisk in the broth and milk/cream, scraping up browned bits from the pan.
  5. Add thyme, salt, and pepper. Simmer 3–5 minutes until slightly thickened.

4. Cook the Potatoes & Chops Together

  1. Layer potato slices in the pan with gravy.
  2. Place browned pork chops on top of potatoes.
  3. Cover and simmer on low heat 25–30 minutes, or until potatoes are tender and chops are fully cooked (internal temp 145°F / 63°C).
  4. Stir occasionally to prevent sticking and ensure gravy thickens nicely.

5. Finish and Serve

  1. Stir in butter for extra richness.
  2. Taste and adjust seasoning.
  3. Serve hot with gravy spooned over the chops and potatoes.

Tips

  • Thicker gravy: Mix 1 tsp cornstarch with 1–2 tbsp water and stir in during the last few minutes.
  • Add vegetables: Carrots or green beans can be added with the potatoes.
  • Make it ahead: The dish tastes even better the next day as flavors meld.
