Ingredients (Serves 4)

  • 4 catfish fillets
  • 1 cup buttermilk
  • 1 cup cornmeal
  • ½ cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp cayenne pepper (optional, for a little kick)
  • Salt and black pepper to taste
  • Vegetable oil or peanut oil for frying
  • Lemon wedges, for serving

Instructions

1️⃣ Marinate the Fish

  1. Rinse catfish fillets and pat dry.
  2. Place fillets in a shallow dish and pour buttermilk over them.
  3. Let soak 15–30 minutes (this tenderizes and adds flavor).

2️⃣ Prepare the Coating

  1. In a large shallow bowl, combine cornmeal, flour, paprika, garlic powder, cayenne, salt, and black pepper.
  2. Mix well.

3️⃣ Coat the Fish

  • Remove fillets from buttermilk, letting excess drip off.
  • Dredge fillets in the cornmeal mixture, pressing lightly so the coating sticks.

4️⃣ Fry the Catfish

  1. Heat about ½ inch of oil in a large skillet over medium-high heat.
  2. Test oil by dropping a pinch of cornmeal — it should sizzle.
  3. Fry fillets 3–4 minutes per side until golden brown and crispy.
  4. Remove and drain on paper towels.

5️⃣ Serve

  • Serve hot with lemon wedges, tartar sauce, and classic Southern sides like coleslaw, hush puppies, or fried okra.

  • Extra crunch: Mix a little cornflake crumbs with the cornmeal.
  • Spicy variation: Add more cayenne or hot paprika to the cornmeal.
  • Oven version: For a lighter option, bake coated fillets at 400°F (200°C) for 15–20 minutes until crispy.
