For the biscuits:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 6 tbsp cold unsalted butter, cut into small pieces
  • ¾ cup buttermilk (cold)

For the sausage filling:

  • 1 lb breakfast sausage (pork or turkey)
  • Optional: a pinch of black pepper or crushed red pepper for a little spice

1. Prepare the sausage:

  1. In a skillet over medium heat, cook sausage until browned and fully cooked.
  2. Drain excess fat and set aside.

2. Make the biscuits:

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cut in cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Stir in cold buttermilk until just combined—do not overmix.
  5. Turn dough onto a lightly floured surface and gently knead 3–4 times.
  6. Roll or pat dough to about ½-inch thickness. Use a biscuit cutter (or a glass) to cut rounds.

3. Assemble and bake:

  1. Place a spoonful of cooked sausage on the bottom half of each biscuit. Top with another biscuit piece to make a sandwich.
  2. Place on a baking sheet lined with parchment paper.
  3. Bake 12–15 minutes, or until golden brown.

4. Serve:

  • Enjoy warm, optionally with butter, honey, or hot sauce.
