🎃 Stuffed Butternut Squash

🧾 Ingredients (2–4 servings)

  • 1 medium butternut squash
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cooked quinoa, rice, or couscous
  • ½ cup chopped mushrooms
  • ½ cup chopped spinach or kale
  • ¼ cup dried cranberries or raisins (optional)
  • ¼ cup toasted nuts (walnuts, pecans, or almonds)
  • ½ tsp paprika or cinnamon (optional)
  • ¼ cup grated Parmesan or shredded cheese (optional)

🍳 Instructions

1. Prepare the squash

  • Preheat oven to 400°F (200°C)
  • Cut squash in half lengthwise and scoop out seeds
  • Brush with olive oil, season with salt and pepper
  • Roast cut-side down on a baking sheet for 25–30 minutes until tender

2. Make the stuffing

  • In a skillet, heat a little olive oil
  • Sauté onion and garlic until soft
  • Add mushrooms, cook until tender
  • Stir in spinach, quinoa (or rice/couscous), dried cranberries, nuts, and spices
  • Taste and adjust seasoning

3. Stuff the squash

  • Flip roasted squash cut-side up
  • Spoon the filling evenly into each half
  • Sprinkle with cheese if using

4. Bake again

  • Return to oven for 10–15 minutes until heated through and cheese is melted

5. Serve

  • Garnish with fresh herbs like parsley or thyme
  • Serve as a hearty vegetarian main or side

  • Swap quinoa for cooked lentils for extra protein
  • Add cooked sausage, chicken, or ground beef for a non-vegetarian version
  • Leftovers keep well and can be reheated for meal prep
