🌮 Taco Casserole

🛒 Ingredients (Serves 4–6)

  • 1 lb (450 g) ground beef
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1 cup salsa
  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 2 cups shredded cheddar or Mexican blend cheese
  • 4–5 small tortillas, cut into strips or triangles
  • Optional toppings: sour cream, avocado, chopped cilantro, sliced jalapeños

👩‍🍳 Instructions

1️⃣ Preheat Oven

  • Preheat oven to 350°F (175°C).
  • Grease a 9×13-inch baking dish.

2️⃣ Cook the Beef

  1. In a skillet over medium heat, cook ground beef until browned.
  2. Drain excess fat.
  3. Stir in taco seasoning, salsa, black beans, and corn.
  4. Cook for 2–3 minutes until heated through.

3️⃣ Layer the Casserole

  1. Spread a layer of tortilla pieces on the bottom of the dish.
  2. Add half of the beef mixture.
  3. Sprinkle 1 cup of cheese.
  4. Repeat layers with remaining tortillas, beef, and cheese.

4️⃣ Bake

  • Bake 20–25 minutes, until cheese is melted and bubbly.

5️⃣ Serve

  • Let cool slightly.
  • Top with sour cream, avocado, cilantro, or jalapeños if desired.

💡 Tips

  • You can swap ground beef for shredded chicken or turkey.
  • Use tortilla chips instead of tortillas for extra crunch.
  • Make it ahead of time and bake just before serving.
