Here’s a soft, fluffy Turkish Bread (often called pide)—perfect for dipping, sandwiches, or serving with kebabs. 🫓✨


Turkish Bread (Pide)

Ingredients (Makes 2 loaves)

  • 3½ cups (440 g) all-purpose flour
  • 1 tbsp sugar
  • 1 tsp salt
  • 2¼ tsp (1 packet) instant yeast
  • 1¼ cups (300 ml) warm water
  • 2 tbsp olive oil

For topping:

  • 1 egg yolk
  • 1 tbsp yogurt (optional, for softer crust)
  • Sesame seeds or nigella seeds (optional)

Instructions

1. Make the dough

  1. In a bowl, mix warm water, sugar, and yeast. Let sit 5–10 minutes until foamy.
  2. Add flour, salt, and olive oil.
  3. Mix and knead for 8–10 minutes until soft and slightly sticky.

2. Let it rise

  • Cover and let the dough rise in a warm place for 1–1½ hours, until doubled in size.

3. Shape the bread

  1. Divide dough into 2 portions.
  2. Shape each into an oval or round flat loaf about 1–2 cm thick.
  3. Place on a lined baking tray.

4. Create the classic pattern

  • Use your fingers to press lines across the dough, forming a grid pattern (signature look of pide).

5. Add topping

  • Mix egg yolk with yogurt and brush over the surface.
  • Sprinkle with sesame or nigella seeds.

6. Bake

  • Preheat oven to 220°C (425°F).
  • Bake for 12–15 minutes until golden and slightly puffed.

7. Serve

  • Brush lightly with olive oil or butter after baking for extra softness.
  • Serve warm.

Tips for Perfect Turkish Bread

  • Dough should be slightly sticky, not dry
  • High heat gives that soft inside + golden crust
  • Best eaten fresh, but can be reheated
