Dry Ingredients:

Wet Ingredients:

  • 1 cup (240 ml) plant-based milk (almond, soy, or oat)
  • ⅓ cup (80 ml) vegetable oil or melted coconut oil
  • ¼ cup (60 ml) fresh lemon juice
  • 1 tbsp lemon zest (for strong flavor)
  • 1 tsp vanilla extract

Optional Lemon Glaze:

  • 1 cup powdered sugar
  • 2–3 tbsp lemon juice

Instructions

1. Preheat & Prep

  • Preheat oven to 350°F (175°C)
  • Grease or line a loaf pan with parchment paper

2. Mix Dry Ingredients

  • In a large bowl, whisk together flour, sugar, poppy seeds, baking powder, baking soda, and salt

3. Combine Wet Ingredients

  • In another bowl, mix plant milk, oil, lemon juice, lemon zest, and vanilla

4. Make the Batter

  • Pour wet ingredients into dry ingredients
  • Stir gently until just combined (do not overmix)

5. Bake

  • Pour batter into prepared loaf pan
  • Bake for 45–55 minutes, or until a toothpick comes out clean

6. Cool & Glaze

  • Let the loaf cool completely before removing from the pan
  • Mix glaze ingredients and drizzle over the top
