  • ¾ cup cold buttermilk

For the sausage gravy:

  • 300–400g breakfast sausage (or any seasoned minced sausage)
  • 2–3 tbsp flour
  • 2–2½ cups milk (whole milk works best)
  • Salt & black pepper to taste
  • Optional: pinch of chili flakes or paprika

🥯 Step 1: Make the biscuits

  1. Preheat oven to 220°C (425°F)
  2. Mix flour, baking powder, baking soda, and salt
  3. Cut in cold butter until mixture looks crumbly
  4. Add cold buttermilk and mix gently (don’t overwork)
  5. Roll dough lightly and cut into rounds
  6. Place on tray and bake 12–15 minutes until golden

🍳 Step 2: Make the sausage gravy

  1. Cook sausage in a pan until browned
  2. Sprinkle flour over sausage and stir for 1–2 minutes
  3. Slowly pour in milk while stirring
  4. Simmer until thick and creamy
  5. Season with salt and lots of black pepper

🍽️ Step 3: Serve

  • Split warm biscuits
  • Pour hot sausage gravy on top
  • Serve immediately
