Here’s a classic fish and chips recipe—crispy on the outside, tender inside, just like you’d expect.


🐟 Fish and Chips (Crispy British Style)

Ingredients

For the fish:

  • 2 large white fish fillets (cod, haddock, or similar)
  • 1 cup flour (plus extra for dusting)
  • 1 cup cold sparkling water or cold beer
  • 1 tsp baking powder
  • Salt and black pepper
  • Oil for deep frying

For the chips (fries):

  • 3–4 large potatoes
  • Oil for frying
  • Salt

👩‍🍳 Instructions

1. Prepare the chips

  • Peel and cut potatoes into thick fries
  • Rinse and pat dry
  • Fry at medium heat (~160°C) for 4–5 minutes (don’t brown yet)
  • Remove and let them rest

2. Make the batter

  • Mix flour, baking powder, salt, and pepper
  • Slowly whisk in cold sparkling water or beer
  • Batter should be smooth and slightly thick

3. Fry the fish

  • Heat oil to ~180°C
  • Lightly coat fish in flour, then dip into batter
  • Fry for 5–7 minutes until golden and crispy
  • Remove and drain on paper towels

4. Finish the chips

  • Fry the chips again at higher heat (~190°C) until golden and crispy
  • Salt immediately

🍽️ Serve with

  • Lemon wedges
  • Tartar sauce
  • Malt vinegar (traditional)

🔥 Tips for best results

  • Keep batter cold for extra crispiness
  • Don’t overcrowd the fryer
  • Use firm white fish for best texture
