🌯 Nacho Egg Rolls

🧾 Ingredients

  • 10–12 egg roll wrappers
  • 1 cup cooked ground beef (or chicken)
  • 1 tsp taco seasoning
  • 1 cup shredded cheddar or Mexican cheese blend
  • ½ cup black beans (drained & rinsed)
  • ½ cup corn kernels
  • ¼ cup diced jalapeños (optional)
  • ¼ cup chopped onions
  • ½ cup crushed tortilla chips
  • 2 tbsp salsa
  • Oil for frying

1. Prepare the filling

  • Cook the meat and mix with taco seasoning
  • Stir in beans, corn, onions, jalapeños, salsa, and cheese
  • Add crushed tortilla chips last for crunch

2. Assemble the egg rolls

  • Lay a wrapper flat like a diamond
  • Spoon 2–3 tbsp filling in the center
  • Fold bottom corner up, then sides, and roll tightly
  • Seal edge with a little water

3. Fry to perfection

  • Heat oil (medium-high)
  • Fry egg rolls 3–4 minutes until golden brown
